Paleo Vegan and Gluten-Free Power Bars

Instructions
- Combine almonds, flax meal, shredded coconut, almond butter, and salt in a food processor and pulse briefly.
- Add melted coconut oil, stevia, honey, and vanilla to the dry ingredients and pulse until a coarse paste forms.
- Press the mixture into an 8 x 8 inch baking dish.
- Chill in the refrigerator for 1 hour until firm.
- Melt chocolate over very low heat in a saucepan, stirring continuously.
- Spread the melted chocolate over the bars and refrigerate for 30 minutes until the chocolate solidifies.
- Serve and store in the refrigerator for up to 1 week.
