Ingredients

The base

  • 1 cup blanched almond flour
  • ¼ teaspoon celtic sea salt
  • ¼ cup coconut oil
  • 2 tablespoons honey
  • 1 tablespoon water
  • 1 teaspoon vanilla extract

The mix-ins

  • ½ cup unsweetened shredded coconut
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • ¼ cup blanched slivered almonds
  • ¼ cup raisins

Instructions

  1. Combine almond flour and salt in a food processor.
  2. Pulse in coconut oil, honey, water, and vanilla until mixed.
  3. Add coconut, pumpkin seeds, sunflower seeds, almond slivers, and raisins, pulsing until combined.
  4. Press the mixture into an 8 x 8 inch baking dish, wetting hands to help pat it down.
  5. Bake at 350°F for 20 minutes.
  6. Cool the bars in the pan for 2 hours before serving.
