Ingredients

The base

  • 3 large eggs
  • 1 cup full fat coconut milk
  • cup coconut oil
  • cup honey
  • 1 tablespoon vanilla extract
  • teaspoon stevia

The dry ingredients

  • ½ cup blanched almond flour
  • 1 tablespoon coconut flour
  • cups unsweetened shredded coconut
  • ¼ teaspoon celtic sea salt

Instructions

  1. 1. Mix eggs, coconut milk, coconut oil, honey, vanilla extract, and stevia in a food processor.
  2. 2. Pulse in almond flour, coconut flour, shredded coconut, and salt until well combined.
  3. 3. Transfer the mixture into an 8 x 8 inch baking dish.
  4. 4. Bake in a preheated oven at 350°F for 30 minutes.
  5. 5. Allow to cool for ½ hour, then refrigerate before serving.
