No Bake Lemon Coconut Paleo Energy Bars

Instructions
- Line an 8x8 pan with parchment or wax paper.
- In a food processor, grind the almonds and cashews until mealy.
- Add coconut and blend until mealy again, then mix in starch and lemon zest.
- Heat water and mix in honey, vanilla, and lemon extract or juice.
- Combine the wet mixture with the nut mixture and add ground flaxseed.
- Press the mixture into the lined pan evenly.
- For the topping, grind coconut flakes and mix with lemon zest and coconut oil.
- Spread the topping over the bars.
- Refrigerate for at least 30 minutes before cutting into squares.
