No Bake Lemon Coconut Paleo Energy Bars

Ingredients

Bar Base

  • 1 ⅔ cup slivered almonds (blanched) or 1 ¾ cups raw almonds (whole)
  • 1 cup raw cashews
  • 1 cup unsweetened coconut flakes (to grind)
  • 1 Tablespoon starch (arrowroot or tapioca)
  • ¼ cup hot water
  • ¼ cup honey or maple syrup
  • to taste none lemon zest
  • 1 teaspoon pure vanilla extract
  • 4 Tablespoons ground flaxseeds

Topping

  • cup unsweetened coconut flakes
  • to taste none lemon zest/peel
  • ½ to 1 teaspoon coconut oil

Instructions

  1. Line an 8x8 pan with parchment or wax paper.
  2. In a food processor, grind the almonds and cashews until mealy.
  3. Add coconut and blend until mealy again, then mix in starch and lemon zest.
  4. Heat water and mix in honey, vanilla, and lemon extract or juice.
  5. Combine the wet mixture with the nut mixture and add ground flaxseed.
  6. Press the mixture into the lined pan evenly.
  7. For the topping, grind coconut flakes and mix with lemon zest and coconut oil.
  8. Spread the topping over the bars.
  9. Refrigerate for at least 30 minutes before cutting into squares.
