No-Bake Apricot Almond Coconut Energy Bars

Instructions
- Line a 9 x 5 inch loaf pan with parchment paper or plastic wrap.
- Combine all ingredients except for the water in a food processor and process on low speed, scraping the sides as needed.
- If the mixture is too dry, add water one tablespoon at a time until it sticks together.
- Transfer the dough to the loaf pan and press down firmly, then top with coconut shreds and press lightly.
- Chill in the fridge for 30 minutes or the freezer for 10 minutes.
- Remove from the pan and cut into 8 bars or squares.
- Store bars in the refrigerator.
- Optionally, roll the dough into round bites instead of bars and coat with coconut shreds.
