No-Bake Apricot Almond Coconut Energy Bars

Ingredients

The bars

  • 1 ½ cups raw almond
  • 1 cup dried apricots
  • ½ cup unsweetened coconut shreds
  • 2 Tbsp. almond butter
  • 1 Tbsp. chia seeds
  • ½ tsp. pure vanilla extract
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • pinch sea salt
  • 1–2 Tbsp. water

Optional flavoring

  • ½ tsp. orange zest
  • ½ of an orange juice

Instructions

  1. Line a 9 x 5 inch loaf pan with parchment paper or plastic wrap.
  2. Combine all ingredients except for the water in a food processor and process on low speed, scraping the sides as needed.
  3. If the mixture is too dry, add water one tablespoon at a time until it sticks together.
  4. Transfer the dough to the loaf pan and press down firmly, then top with coconut shreds and press lightly.
  5. Chill in the fridge for 30 minutes or the freezer for 10 minutes.
  6. Remove from the pan and cut into 8 bars or squares.
  7. Store bars in the refrigerator.
  8. Optionally, roll the dough into round bites instead of bars and coat with coconut shreds.
