Ingredients

The nut mixture

  • ¾ cup raw almonds, lightly toasted
  • ¾ cup raw cashews, lightly toasted
  • cup unsweetened coconut flakes, lightly toasted

The binding mixture

  • ½ cup honey
  • 3 tablespoons water
  • 1 pinch salt
  • 1 teaspoon vanilla (optional)

Instructions

  1. Preheat the oven to 325°F to toast the nuts and coconut.
  2. Heat honey, salt, water, and vanilla in a small pot over medium heat until bubbling, then lower to medium-low and simmer until the honey reaches 270°F.
  3. While the honey heats, toast the nuts and coconut in the oven for about 8-10 minutes until fragrant.
  4. Once the honey reaches 270°F, turn off the heat and stir in the toasted nuts and coconut until well coated.
  5. Spread the mixture into a parchment-lined 8x8 inch pan, pressing down firmly to compact it.
  6. Let the mixture sit at room temperature for 45 minutes before cutting into bars.
  7. Cut the bars before they cool completely to avoid crumbling.
