Coconut Almond Nut Bars

The binding mixture

Instructions
- Preheat the oven to 325°F to toast the nuts and coconut.
- Heat honey, salt, water, and vanilla in a small pot over medium heat until bubbling, then lower to medium-low and simmer until the honey reaches 270°F.
- While the honey heats, toast the nuts and coconut in the oven for about 8-10 minutes until fragrant.
- Once the honey reaches 270°F, turn off the heat and stir in the toasted nuts and coconut until well coated.
- Spread the mixture into a parchment-lined 8x8 inch pan, pressing down firmly to compact it.
- Let the mixture sit at room temperature for 45 minutes before cutting into bars.
- Cut the bars before they cool completely to avoid crumbling.
