No Bake Honey Nut Bars

Ingredients

The base

  • 1 cup unsweetened shredded coconut
  • 1 cup almonds
  • ½ cup pecans
  • ½ cup walnuts
  • ½ cup shelled sunflower seeds

The binding ingredients

  • ¼ cup coconut oil
  • ¼ cup raw honey

Optional ingredients

  • 2 tbsp collagen
  • 2 tbsp ground flax seeds

Instructions

  1. Add all ingredients to a food processor and pulse a few times to break them up.
  2. Process continuously for 30 seconds until crumb-sized pieces form.
  3. Scrape the bowl edges and process for another 2 minutes until the mixture starts to clump together.
  4. Line a 9"x9" baking dish with parchment paper and press the mixture into an even layer.
  5. Cover and chill for at least an hour.
  6. Uncover and cut into bars or squares as desired.
  7. Store in an airtight container in the refrigerator for up to two weeks.
