Instructions
- Preheat the oven to 350°F and line a 9x13 inch pan with parchment paper, greasing it with coconut oil.
- In a saucepan, combine honey, coconut sugar, and coconut oil, and bring to a boil for 3-4 minutes.
- Remove from heat and stir in vanilla, allowing the mixture to cool slightly.
- In the prepared pan, combine the peanuts, almonds, pistachios, cashews, and pepitas, then sprinkle the sesame and hemp seeds on top.
- Pour the honey mixture over the nuts, ensuring even coverage as it warms in the oven.
- Bake for 25-30 minutes until golden, adjusting time for desired firmness.
- Allow to cool completely before cutting into bars.
- Freeze the bars for 20-30 minutes before dipping them in melted chocolate.
- Sprinkle with flaky sea salt and freeze again for 5 minutes to set the chocolate.
