Ingredients

The base

  • ¾ cup honey
  • 2 tablespoons coconut sugar or brown sugar
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla

The nuts

  • 1 cup roasted peanuts
  • 1 cup raw almonds
  • ½ cup roasted shelled pistachios
  • ½ cup roasted cashews
  • ½ cup raw pepitas
  • 2 tablespoons raw sesame seeds
  • 2 tablespoons raw hemp seeds

The chocolate coating

  • 8-12 ounces dark chocolate, melted
  • to taste flaky sea salt for sprinkling

Instructions

  1. Preheat the oven to 350°F and line a 9x13 inch pan with parchment paper, greasing it with coconut oil.
  2. In a saucepan, combine honey, coconut sugar, and coconut oil, and bring to a boil for 3-4 minutes.
  3. Remove from heat and stir in vanilla, allowing the mixture to cool slightly.
  4. In the prepared pan, combine the peanuts, almonds, pistachios, cashews, and pepitas, then sprinkle the sesame and hemp seeds on top.
  5. Pour the honey mixture over the nuts, ensuring even coverage as it warms in the oven.
  6. Bake for 25-30 minutes until golden, adjusting time for desired firmness.
  7. Allow to cool completely before cutting into bars.
  8. Freeze the bars for 20-30 minutes before dipping them in melted chocolate.
  9. Sprinkle with flaky sea salt and freeze again for 5 minutes to set the chocolate.
