Instructions
- Preheat the oven to 300°F (149°C) and line a baking pan with parchment paper.
- In a bowl, mix together honey, almond meal, peanut butter, and vanilla until well combined.
- Fold in the chopped peanuts, dates, and chocolate chips.
- Transfer the mixture to the prepared baking pan and press it firmly into an even layer.
- Bake for 20-22 minutes until lightly browned on the edges.
- Allow the bars to cool completely in the pan for 1 hour, then refrigerate for another hour to firm up.
- Remove the bars from the pan and cut into squares or rectangles.
- Drizzle with melted chocolate if desired, and wrap individually for storage.
