Ingredients

The base

  • cup honey or brown rice syrup
  • cup almond meal
  • 1 Tablespoon peanut butter
  • ½ teaspoon pure vanilla extract
  • 2 cups salted peanuts, roughly chopped
  • 5 pieces Medjool dates, roughly chopped
  • cup mini chocolate chips

Optional drizzle

  • 4 ounces melted semi-sweet chocolate

Instructions

  1. Preheat the oven to 300°F (149°C) and line a baking pan with parchment paper.
  2. In a bowl, mix together honey, almond meal, peanut butter, and vanilla until well combined.
  3. Fold in the chopped peanuts, dates, and chocolate chips.
  4. Transfer the mixture to the prepared baking pan and press it firmly into an even layer.
  5. Bake for 20-22 minutes until lightly browned on the edges.
  6. Allow the bars to cool completely in the pan for 1 hour, then refrigerate for another hour to firm up.
  7. Remove the bars from the pan and cut into squares or rectangles.
  8. Drizzle with melted chocolate if desired, and wrap individually for storage.
