Ingredients

The base

  • cup honey or brown rice syrup
  • ¼ teaspoon pure vanilla extract
  • cup almond meal
  • teaspoon salt
  • 1 tablespoon almond butter

The mix-ins

  • 2 cups whole almonds, roughly chopped
  • ½ cup dried cherries, roughly chopped
  • cup mini chocolate chips

Instructions

  1. Preheat the oven to 300°F (149°C) and line a baking pan with parchment paper.
  2. Mix honey, vanilla, almond meal, salt, and almond butter until combined.
  3. Fold in the chopped almonds, cherries, and chocolate chips.
  4. Transfer the mixture to the baking pan and press it firmly into an even layer.
  5. Bake for 20 minutes, then cool completely in the pan for 1 hour.
  6. Refrigerate for an additional hour to firm up the bars.
  7. Remove from the pan, cut into bars, and wrap each bar individually.
