Ingredients

The base

  • cup honey or brown rice syrup
  • 1 teaspoon pure vanilla extract
  • ¼ cup almond meal
  • teaspoon salt
  • 1 Tablespoon almond butter

The mix-ins

  • 1⅓ cups whole almonds, roughly chopped
  • 5 Medjool dates, coarsely chopped
  • ¾ cup salted sunflower seeds

Instructions

  1. Preheat the oven to 300°F (149°C) and line a baking pan with parchment paper.
  2. Mix together honey, vanilla, almond meal, salt, and almond butter until combined.
  3. Fold in the chopped almonds, dates, and sunflower seeds.
  4. Transfer the mixture to the prepared pan and press it firmly into an even layer.
  5. Bake for 20 minutes, then cool in the pan for 1 hour before refrigerating for another hour.
  6. Remove from the pan and cut into bars. Wrap individually and store.
