Almond Coconut Snack Bars

Ingredients

The base

  • 2 tbsp ground flaxseed
  • 6 tbsp water
  • 6 medjool dates pitted
  • 1 cup old-fashioned oats
  • 1 cup almond meal
  • 3 tbsp cacao powder
  • ½ tsp baking soda
  • ½ tsp salt

The mix-ins

  • cup chocolate chips
  • cup unsweetened flaked coconut
  • cup Blue Diamond Dark Chocolate Almonds, chopped

The sweeteners

  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • ½ tsp almond extract

Instructions

  1. Preheat the oven to 350°F and line an 8x8 inch baking dish with parchment paper.
  2. In a small bowl, combine flaxseed and water, then set aside.
  3. Pit the dates and soak them in hot water for a few minutes.
  4. In a large bowl, mix oats, almond meal, cacao powder, baking soda, salt, chocolate chips, coconut, and chopped almonds.
  5. Drain the dates and blend them with the maple syrup, vanilla extract, almond extract, and flax mixture until smooth.
  6. Combine the wet mixture with the dry ingredients and press into the prepared baking dish.
  7. Bake for 12 minutes and let cool completely before cutting into bars.
