Instructions
- Preheat the oven to 350°F and line an 8x8 inch baking dish with parchment paper.
- In a small bowl, combine flaxseed and water, then set aside.
- Pit the dates and soak them in hot water for a few minutes.
- In a large bowl, mix oats, almond meal, cacao powder, baking soda, salt, chocolate chips, coconut, and chopped almonds.
- Drain the dates and blend them with the maple syrup, vanilla extract, almond extract, and flax mixture until smooth.
- Combine the wet mixture with the dry ingredients and press into the prepared baking dish.
- Bake for 12 minutes and let cool completely before cutting into bars.
