Ingredients

The base

  • ¼ cup honey
  • ½ teaspoon pure vanilla extract
  • ¼ cup almond meal
  • teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 tablespoon almond butter

The mix-ins

  • 1⅓ cups whole almonds, roughly chopped
  • ½ cup dried cranberries
  • ¾ cup salted pepitas (shelled pumpkin seeds)

Instructions

  1. 1. Preheat the oven to 300°F (149°C) and line a baking pan with parchment paper.
  2. 2. In a mixing bowl, combine honey, vanilla, almond meal, salt, pumpkin pie spice, and almond butter until well mixed.
  3. 3. Fold in the chopped almonds, dried cranberries, and pepitas until evenly distributed.
  4. 4. Press the mixture firmly into the prepared baking pan.
  5. 5. Bake for 20-22 minutes until set, then cool in the pan for 1 hour.
  6. 6. Refrigerate for an additional hour to firm up before slicing into bars.
  7. 7. Wrap each bar individually and store at room temperature for up to 1 week or in the refrigerator for up to 2 weeks.
