Instructions
- 1. Preheat the oven to 300°F (149°C) and line a baking pan with parchment paper.
- 2. In a mixing bowl, combine honey, vanilla, almond meal, salt, pumpkin pie spice, and almond butter until well mixed.
- 3. Fold in the chopped almonds, dried cranberries, and pepitas until evenly distributed.
- 4. Press the mixture firmly into the prepared baking pan.
- 5. Bake for 20-22 minutes until set, then cool in the pan for 1 hour.
- 6. Refrigerate for an additional hour to firm up before slicing into bars.
- 7. Wrap each bar individually and store at room temperature for up to 1 week or in the refrigerator for up to 2 weeks.
