Berry Vanilla Cashew Snack Bars

Instructions
- Preheat the oven to 300°F (149°C) and line an 8-inch or 9-inch square baking pan with parchment paper.
- In a bowl, mix together the honey, vanilla, almond meal, salt, and almond butter until combined.
- Fold in the chopped cashews, dried blueberries, dried cranberries, and sunflower seeds.
- Transfer the mixture to the prepared baking pan and press it firmly into an even layer.
- Bake for 22 minutes, then allow to cool completely in the pan for 1 hour.
- Transfer the pan to the refrigerator and chill for 1 more hour to firm up the bars.
- Remove the bars from the pan using the parchment overhang and cut into bars.
- Wrap each bar individually in plastic wrap or parchment and store at room temperature for 1 week or in the refrigerator for up to 2 weeks.
