Ingredients

The base

  • cup honey or brown rice syrup
  • 1 teaspoon pure vanilla extract
  • cup almond meal
  • teaspoon salt
  • 1 Tablespoon almond butter

The mix-ins

  • 1 ⅓ cups raw unsalted cashews, roughly chopped
  • ¼ cup dried blueberries
  • ¼ cup dried cranberries
  • cup salted sunflower seeds

Instructions

  1. Preheat the oven to 300°F (149°C) and line an 8-inch or 9-inch square baking pan with parchment paper.
  2. In a bowl, mix together the honey, vanilla, almond meal, salt, and almond butter until combined.
  3. Fold in the chopped cashews, dried blueberries, dried cranberries, and sunflower seeds.
  4. Transfer the mixture to the prepared baking pan and press it firmly into an even layer.
  5. Bake for 22 minutes, then allow to cool completely in the pan for 1 hour.
  6. Transfer the pan to the refrigerator and chill for 1 more hour to firm up the bars.
  7. Remove the bars from the pan using the parchment overhang and cut into bars.
  8. Wrap each bar individually in plastic wrap or parchment and store at room temperature for 1 week or in the refrigerator for up to 2 weeks.
