Ingredients

  • 1 cup pitted soft medjool dates, packed
  • 1 ½ cups salted peanuts
  • ¼ cup chocolate protein powder
  • ¼ cup cacao powder
  • 2 tbsp chocolate chips
  • ½ tsp coconut oil

Instructions

  1. Line a loaf pan with parchment or wax paper and soak hard dates in warm water if necessary.
  2. Process dates and peanuts in a food processor until crumbly.
  3. Add protein powder, cacao powder, and water, then process until a dough ball forms.
  4. Flatten the mixture in the lined pan until even and smooth.
  5. Melt chocolate chips and coconut oil, drizzle over the bars, and top with crushed peanuts if desired.
  6. Freeze overnight and cut into bars.
