Vegan Peanut Butter Protein Bars

Instructions
- Blend peanut butter and pitted dates in a food processor until combined.
- Add hemp seeds, chia seeds, and protein powder, then pulse until a cookie dough-like texture forms.
- Adjust the mixture by adding more dry ingredients if too wet or more nut butter if too dry.
- Line a loaf pan with parchment paper and spread the mixture evenly in the pan.
- Freeze for at least 10-15 minutes to firm up.
- If using, melt dark chocolate and coconut oil, then drizzle over the bars.
- Cut into 12 bars or squares after chilling.
