Easy Vegan Protein Bars

Instructions
- Line an 8x8-inch baking pan with parchment paper.
- Pop the amaranth by heating a pot over medium-high heat and adding small amounts at a time until they start popping, then transfer to a bowl.
- In a medium mixing bowl, combine peanut butter and maple syrup, then stir in the protein powder.
- Gradually add the popped amaranth until a loose dough forms.
- Transfer the mixture to the baking dish and press down evenly.
- Cover and freeze for 10-15 minutes until firm, then slice into bars.
