Easy Vegan Protein Bars

Ingredients

The base

  • cup amaranth
  • 1 cup creamy salted peanut or almond butter

The sweetener and flavor

  • 1½ - 2 Tbsp maple syrup
  • 3 Tbsp vanilla or unflavored vegan protein powder
  • 2-3 Tbsp melted dark vegan chocolate (optional)

Instructions

  1. Line an 8x8-inch baking pan with parchment paper.
  2. Pop the amaranth by heating a pot over medium-high heat and adding small amounts at a time until they start popping, then transfer to a bowl.
  3. In a medium mixing bowl, combine peanut butter and maple syrup, then stir in the protein powder.
  4. Gradually add the popped amaranth until a loose dough forms.
  5. Transfer the mixture to the baking dish and press down evenly.
  6. Cover and freeze for 10-15 minutes until firm, then slice into bars.
