Homemade Vegan Protein Bars
Ingredients
The base

whole chickpeas

rolled oats or quick oats

dried apricots

dried cranberries or cherries

unsweetened almond or coconut milk

Instructions
- 1. Preheat the oven to 350°F.
- 2. Wash and dry the chickpeas and set aside.
- 3. In a blender, combine oats, chia, and apricots, and blend until chopped. Transfer to a large mixing bowl.
- 4. In the same blender, add the chickpeas and blend until chopped but not pureed.
- 5. Add the chickpea mixture to the oat and apricot mixture.
- 6. Mix in honey, milk, cinnamon, salt, and cherries until well combined.
- 7. Press the batter into a greased 9x9 pan.
- 8. Bake for about 30 minutes or until the edges are golden brown and the center is set.
