Homemade Vegan Protein Bars

Ingredients

The base

  • 1 ¾ cups whole chickpeas
  • ½ cup rolled oats or quick oats
  • cup dried apricots
  • cup dried cranberries or cherries
  • 2 – 3 tablespoons chia seed

The sweeteners and liquids

  • 4 tablespoons maple syrup or honey
  • 1 teaspoon vanilla
  • cup unsweetened almond or coconut milk

The seasonings

  • 1 dash cinnamon
  • 1 dash sea salt

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Wash and dry the chickpeas and set aside.
  3. 3. In a blender, combine oats, chia, and apricots, and blend until chopped. Transfer to a large mixing bowl.
  4. 4. In the same blender, add the chickpeas and blend until chopped but not pureed.
  5. 5. Add the chickpea mixture to the oat and apricot mixture.
  6. 6. Mix in honey, milk, cinnamon, salt, and cherries until well combined.
  7. 7. Press the batter into a greased 9x9 pan.
  8. 8. Bake for about 30 minutes or until the edges are golden brown and the center is set.
