No Bake Apricot Oat Protein Bars

Instructions
- Line an 8x8 or 9x9 pan with parchment paper.
- Blend pumpkin seeds, gluten free oats, and flaxseed until a mealy batter forms.
- Place the batter in a bowl.
- Blend or pulse the apricots until finely chopped and mix with the oat/seed blend.
- Add protein powder, salt, and cinnamon to the mixture.
- In a separate bowl, mix maple syrup or honey with hot water and vanilla extract, then combine with the dry ingredients.
- Mix well with hands and press into the baking dish.
- Sprinkle extra chopped apricots and oats on top, and drizzle melted chocolate if desired.
- Let the bars cool in the fridge for about 30 minutes to set.
- Once set, cut into 10 squares and keep refrigerated.
