Apricot-Pistachio Bars

Ingredients

  • 2.75 cups rolled oats
  • ½ cup dried apricots, chopped
  • cup shelled pistachios
  • ½ tsp salt
  • ¾ cup brown sugar, packed
  • 1 large egg
  • ¼ cup ground flaxseed meal
  • ½ cup vanilla soy milk
  • 1 tsp vanilla extract
  • 1 tbsp brown rice syrup

Instructions

  1. Preheat the oven to 350°F.
  2. Spray an 8” x 8” baking pan with non-stick cooking spray.
  3. In a large mixing bowl, combine all the ingredients until smooth.
  4. Spread the batter in the prepared baking pan.
  5. Bake for approximately 25 minutes until the bars are cooked through.
  6. Let the bars cool completely in the pan before cutting.
