Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine oats, flour, baking powder, baking soda, cinnamon, and salt.
- In a stand mixer, mix the butter, vanilla, and brown sugar until creamy, then add the egg and mix until combined.
- Gradually add the oat mixture to the wet ingredients and mix until just combined.
- Fold in the cranberries and pistachios gently.
- Scoop 1 tablespoon of cookie batter onto a baking sheet lined with parchment paper, placing them 2 inches apart.
- Bake for 8-10 minutes, then remove from the oven and let cool on a wire rack.
