Ingredients

The cookie base

  • cup regular oats
  • ¾ cup all purpose flour
  • ¾ cup brown sugar
  • 1 large egg
  • ½ cup unsalted butter, softened
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • pinch salt

The mix-ins

  • ¾ cup dried cranberries
  • ¼ cup pistachios

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine oats, flour, baking powder, baking soda, cinnamon, and salt.
  3. In a stand mixer, mix the butter, vanilla, and brown sugar until creamy, then add the egg and mix until combined.
  4. Gradually add the oat mixture to the wet ingredients and mix until just combined.
  5. Fold in the cranberries and pistachios gently.
  6. Scoop 1 tablespoon of cookie batter onto a baking sheet lined with parchment paper, placing them 2 inches apart.
  7. Bake for 8-10 minutes, then remove from the oven and let cool on a wire rack.
