Ingredients

Dry Ingredients

  • ¾ cup rolled oats
  • ½ cup pecans, chopped
  • ½ cup finely shredded unsweetened coconut
  • ½ cup dried cranberries
  • ¼ cup whole wheat flour
  • 2 tbsp chia seeds
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ¼ tsp baking powder
  • ¼ tsp baking soda

Wet Ingredients

  • 2 large eggs, at room temperature
  • 2 tbsp melted coconut oil
  • ½ cup creamy peanut butter
  • ¼ cup unpasteurized honey
  • ½ tsp pure vanilla extract

Optional

  • 16-20 pieces pecan halves, to decorate

Instructions

  1. Preheat the oven to 350°F and grease a 9" baking pan lined with parchment paper.
  2. In a large bowl, combine all dry ingredients and mix well.
  3. In a smaller bowl, whisk together all wet ingredients until smooth.
  4. Pour the wet mixture over the dry ingredients and mix thoroughly.
  5. Transfer the mixture to the prepared pan, spreading it evenly and flattening the top.
  6. Optionally, press pecan halves on top for decoration.
  7. Bake for 23-25 minutes until golden brown and a toothpick comes out clean.
  8. Allow to cool for at least 1 hour before lifting from the pan and slicing into bars.
  9. Store any uneaten bars in an airtight container for up to a week.
