Oatmeal Breakfast Bars

Ingredients

The base

  • 1 ¾ cups Rolled oats
  • 2 tbsp Almond flour
  • ¼ tsp Sea salt

The mix-ins

  • ¼ cup Raisins
  • ¼ cup Dried cranberries
  • 3 tbsp Almonds

The sweeteners and fats

  • 3 tbsp Honey
  • ¼ cup Brown sugar or sweetener
  • cup Butter

The topping

  • cup Sugar-free dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (177°C) and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, mix together the oats, almond flour, salt, raisins, cranberries, and almonds.
  3. In a saucepan, melt the butter, brown sweetener, and honey over low heat.
  4. Combine the melted mixture with the dry ingredients and mix well.
  5. Transfer the mixture to the prepared pan and press it down evenly.
  6. Bake for 20-25 minutes until golden around the edges.
  7. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Melt the chocolate chips in the microwave and drizzle over the cooled bars.
  9. Slice into bars or squares once the chocolate has set.
