Ingredients

The base

  • 1 cup quick cooking oats
  • 1 cup oat flour
  • 2 Tbsp brown sugar
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt

The wet ingredients

  • 3 large eggs
  • ½ cup almond milk
  • ¼ cup coconut oil, melted and cooled slightly
  • cup honey
  • tsp vanilla extract

The mix-in

  • 1 cup blueberries

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk together the oats, oat flour, brown sugar, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the eggs, almond milk, coconut oil, honey, and vanilla until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, then fold in the blueberries.
  5. Pour the mixture into a prepared 8×8-inch baking dish and bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the pan sit for 5 minutes, then remove from the pan and let cool completely on a wire rack.
  7. Slice into 16 square bars (or 9 larger bars) and enjoy.
