Blueberry Oatmeal Bars

Ingredients

The bars

  • 1 cup old-fashioned rolled oats
  • ¾ cup white whole wheat flour
  • cup light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • 6 tablespoons unsalted butter, melted
  • 2 cups fresh blueberries
  • 1 teaspoon cornstarch
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon granulated sugar

The optional glaze

  • ½ cup powdered sugar
  • ½ teaspoon pure vanilla extract
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 375°F and line an 8x8-inch baking pan with parchment paper.
  2. In a medium bowl, mix the oats, flour, brown sugar, cinnamon, and salt.
  3. Add the melted butter and stir until clumps form, reserving ½ cup of the mixture.
  4. Press the remaining mixture into the bottom of the prepared pan.
  5. Layer half of the blueberries on top, then sprinkle with cornstarch, lemon juice, and half of the granulated sugar.
  6. Add the remaining blueberries and sprinkle with the rest of the sugar and reserved crumble mixture.
  7. Bake for 30 to 40 minutes until bubbly and golden.
  8. Cool completely, then prepare the glaze by whisking together powdered sugar, vanilla, and milk.
  9. Lift the bars from the pan, drizzle with glaze, slice, and serve.
