Lemon Blueberry Oatmeal Bars

The Lemon Blueberry Filling

fresh blueberries

brown sugar

fresh lemon juice

white whole wheat flour
Instructions
- Preheat the oven to 350°F and line an 8×8-inch pan with parchment paper.
- In a large bowl, combine melted butter, white whole wheat flour, regular oats, honey, brown sugar, lemon zest, and salt until just combined.
- Set aside 1 cup of the mixture for the crumble topping.
- Press the remaining mixture into the bottom of the prepared pan to form a crust.
- In a small bowl, combine blueberries, brown sugar, lemon juice, and white whole wheat flour for the filling.
- Spread the blueberry mixture over the crust evenly.
- Sprinkle the reserved crumble mixture on top of the blueberry filling.
- Bake for 50 minutes, then let cool for 10 minutes before cutting and serving.
