Ingredients

The Crust & Crumble

  • 6 tablespoons unsalted butter, melted
  • 1 ½ cups white whole wheat flour
  • 1 ½ cups regular oats
  • ½ cup honey
  • ¼ cup brown sugar
  • 1 teaspoon fresh lemon zest
  • pinch salt

The Lemon Blueberry Filling

  • 2 cups fresh blueberries
  • ¼ cup brown sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon white whole wheat flour

Instructions

  1. Preheat the oven to 350°F and line an 8×8-inch pan with parchment paper.
  2. In a large bowl, combine melted butter, white whole wheat flour, regular oats, honey, brown sugar, lemon zest, and salt until just combined.
  3. Set aside 1 cup of the mixture for the crumble topping.
  4. Press the remaining mixture into the bottom of the prepared pan to form a crust.
  5. In a small bowl, combine blueberries, brown sugar, lemon juice, and white whole wheat flour for the filling.
  6. Spread the blueberry mixture over the crust evenly.
  7. Sprinkle the reserved crumble mixture on top of the blueberry filling.
  8. Bake for 50 minutes, then let cool for 10 minutes before cutting and serving.
