Healthy Blueberry Pie Bars

Ingredients

The crust

  • 1 cup old-fashioned oats
  • ¾ cup whole wheat flour
  • ¾ cup walnuts
  • ½ cup coconut sugar
  • ½ tsp baking powder
  • ¼ tsp fine sea salt
  • 6 tbsp salted butter

The filling

  • 2 ½ cups fresh blueberries
  • 2 tbsp whole wheat flour
  • 2 tbsp coconut sugar
  • ½ lemon zest and juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and line an 8x8 inch baking dish with parchment paper.
  2. In a food processor, pulse oats, flour, walnuts, sugar, baking powder, and salt until broken down. Add butter and 1 tbsp of water, pulsing until crumbly.
  3. Press ⅔ of the dough into the prepared baking dish and bake for 10 minutes.
  4. Mix blueberries, flour, sugar, lemon juice and zest, and vanilla in a bowl. Spoon the filling onto the pre-baked crust.
  5. Sprinkle the remaining dough on top of the filling and gently press down. Bake for 25 minutes until golden.
  6. Cool completely, ideally refrigerate for a few hours before cutting into bars.
