Healthy Blueberry Pie Bars

The filling

Instructions
- Preheat the oven to 350°F and line an 8x8 inch baking dish with parchment paper.
- In a food processor, pulse oats, flour, walnuts, sugar, baking powder, and salt until broken down. Add butter and 1 tbsp of water, pulsing until crumbly.
- Press ⅔ of the dough into the prepared baking dish and bake for 10 minutes.
- Mix blueberries, flour, sugar, lemon juice and zest, and vanilla in a bowl. Spoon the filling onto the pre-baked crust.
- Sprinkle the remaining dough on top of the filling and gently press down. Bake for 25 minutes until golden.
- Cool completely, ideally refrigerate for a few hours before cutting into bars.
