Triple Berry Pie Bars

frozen mixed berries (strawberries, blackberries, and blueberries)
Instructions
- Preheat the oven to 350°F and grease a 9x13 baking pan.
- Pulse oats in a food processor until coarse, then add flour, sugar, and salt, and pulse to mix.
- Cut butter into cubes and add to the mixture, processing until crumbly.
- Reserve 1 ½ cups of the mixture for topping, then press the rest into the pan and bake for 12-15 minutes.
- Cool the crust for at least 10 minutes.
- In a large bowl, whisk eggs and then add sugar, sour cream, flour, salt, lemon zest, and vanilla extract.
- Gently fold in the berries and spoon the mixture over the crust.
- Sprinkle the reserved crumb mixture over the filling and bake for 45-55 minutes.
- Cool for at least 1 hour before cutting into bars and serve as desired.
