Instructions
- Preheat the oven to 375°F and grease a 9 x 13 inch pan.
- Melt 1 cup of butter or coconut oil, let it cool, and divide it into ¾ cup for the base and ¼ cup for the crumb topping.
- Combine the dry ingredients for the base in a medium bowl.
- In a small bowl, mix the wet ingredients for the base and then combine them with the dry ingredients.
- Press the base mixture evenly into the prepared pan.
- In a medium bowl, mix the blueberries, maple syrup, and lemon zest, then spread this mixture over the base layer.
- For the crumb topping, stir together the ingredients and sprinkle it over the blueberry layer.
- Bake for 30 to 35 minutes or until the top is brown. Allow to cool completely before cutting.
