Instructions
- Preheat the oven to 325°F and grease an 8x8 inch baking dish.
- In a saucepan, combine blueberries, chia seeds, and maple syrup, cooking for about 10 minutes and mashing the blueberries to create a jam.
- In a large bowl, mix oats, oat flour, sugar, cinnamon, salt, and baking soda.
- Add applesauce, maple syrup, and melted coconut oil to the dry ingredients and stir to combine.
- Set aside a heaping half cup of the oat mixture, then spread the remaining mixture evenly in the prepared pan.
- Spread the blueberry chia jam over the oat mixture, then crumble the reserved oat mixture on top.
- Bake for 30 minutes and allow to cool completely before cutting into 12 bars.
