Ingredients

Blueberry Chia Jam

  • cups blueberries
  • tbsp chia seeds
  • 1 tbsp pure maple syrup

Oatmeal Bars

  • 1 cup oat flour
  • cups old-fashioned oats
  • 2 tbsp coconut sugar (or brown sugar)
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ tsp baking soda
  • ½ cup unsweetened applesauce
  • ¼ cup pure maple syrup
  • ¼ cup coconut oil, melted

Instructions

  1. Preheat the oven to 325°F and grease an 8x8 inch baking dish.
  2. In a saucepan, combine blueberries, chia seeds, and maple syrup, cooking for about 10 minutes and mashing the blueberries to create a jam.
  3. In a large bowl, mix oats, oat flour, sugar, cinnamon, salt, and baking soda.
  4. Add applesauce, maple syrup, and melted coconut oil to the dry ingredients and stir to combine.
  5. Set aside a heaping half cup of the oat mixture, then spread the remaining mixture evenly in the prepared pan.
  6. Spread the blueberry chia jam over the oat mixture, then crumble the reserved oat mixture on top.
  7. Bake for 30 minutes and allow to cool completely before cutting into 12 bars.
