Ingredients

The base

  • 1 cup old-fashioned rolled oats
  • ½ cup gluten-free flour blend
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine salt

The wet ingredients

  • 1 medium banana (mashed)
  • 2 large eggs
  • 3 tablespoons melted unsalted butter
  • ¼ cup maple syrup
  • 1 teaspoon pure vanilla extract

Add-ins and toppings

  • cup chopped walnuts
  • 1 cup frozen wild blueberries

Instructions

  1. Preheat the oven to 350ºF and grease a 9x9 baking dish.
  2. In a bowl, mix the oats, flour, baking soda, cinnamon, and salt.
  3. In another bowl, combine the mashed banana, eggs, melted butter, maple syrup, and vanilla.
  4. Add the banana mixture to the oat mixture and stir until combined, then fold in ½ cup of walnuts and ¾ cup of blueberries gently.
  5. Spread the batter in the baking dish and top with remaining blueberries and walnuts.
  6. Bake for 22-26 minutes until a toothpick comes out clean.
  7. Allow to cool for 15 minutes before cutting into squares.
