Ingredients

The Crust & Crumble

  • 6 tablespoons unsalted butter, melted
  • cups white whole wheat flour
  • cups old-fashioned rolled oats
  • ½ cup honey
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • pinch salt

The Strawberry Filling

  • 3 cups sliced fresh strawberries
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon white whole wheat flour

Instructions

  1. Preheat the oven to 350°F and prepare an 8×8-inch pan with parchment paper and cooking spray.
  2. In a large bowl, combine melted butter, flour, oats, honey, brown sugar, cinnamon, and salt until just mixed and crumbly.
  3. Set aside 1 cup of the mixture for the crumble topping.
  4. Press the remaining mixture evenly into the bottom of the prepared pan to form the crust.
  5. In a small bowl, mix the strawberries, lemon juice, vanilla extract, and flour until combined.
  6. Spread the strawberry mixture over the crust evenly.
  7. Sprinkle the reserved crumble mixture on top of the strawberry layer.
  8. Bake in the preheated oven for 50 minutes.
  9. Allow the bars to cool for at least 10 minutes before slicing and serving.
