Healthy Strawberry Oatmeal Bars

Instructions
- Preheat the oven to 350°F and line an 8x8 inch baking dish with parchment paper.
- In a medium pot, combine strawberries, lemon juice, maple syrup, and cornstarch, and bring to a simmer for about 5 minutes.
- In a mixing bowl, whisk together oats, oat flour, almond flour, and salt.
- Add maple syrup, melted butter, and vanilla to the dry ingredients and mix until a moist dough forms, reserving about ½ cup for topping.
- Press the remaining mixture into the lined pan, pour the strawberry mixture on top, and crumble the reserved topping over it.
- Bake for 35-40 minutes until golden, then cool completely before slicing.
