Ingredients

Crust and Crumble

  • cups superfine blanched almond meal
  • cups rolled oats
  • 1 tablespoon unsweetened almond milk
  • ¼ cup softened coconut oil
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • teaspoon salt
  • 1 tablespoon coconut sugar

Strawberry Filling

  • 3 cups fresh strawberries, finely diced
  • ¼ cup lemon juice
  • zest from one lemon
  • cup maple syrup
  • 2 tablespoons tapioca flour
  • pinch of salt

Instructions

  1. Preheat the oven to 350ºF and line an 8×8-inch pan with parchment paper.
  2. Mix all crust and crumble ingredients together, except for the coconut sugar.
  3. Press 2/3 of the mixture evenly into the bottom of the pan and set the rest aside.
  4. Add 1 tablespoon of coconut sugar to the remaining mixture for the crumble topping.
  5. Bake the crust for 10 minutes and let it cool.
  6. In a saucepan, combine the strawberry filling ingredients (except for the tapioca flour) and bring to a boil.
  7. Reduce heat and simmer for 20 minutes, stirring frequently.
  8. Add tapioca flour to the filling and stir until thickened.
  9. Pour the filling over the crust and sprinkle the crumble topping on top.
  10. Bake for an additional 20 minutes, then let cool for 20 minutes before refrigerating for at least 2 hours.
