Strawberry Oatmeal Bars

Strawberry Filling

fresh strawberries, finely diced

tapioca flour

Instructions
- Preheat the oven to 350ºF and line an 8×8-inch pan with parchment paper.
- Mix all crust and crumble ingredients together, except for the coconut sugar.
- Press 2/3 of the mixture evenly into the bottom of the pan and set the rest aside.
- Add 1 tablespoon of coconut sugar to the remaining mixture for the crumble topping.
- Bake the crust for 10 minutes and let it cool.
- In a saucepan, combine the strawberry filling ingredients (except for the tapioca flour) and bring to a boil.
- Reduce heat and simmer for 20 minutes, stirring frequently.
- Add tapioca flour to the filling and stir until thickened.
- Pour the filling over the crust and sprinkle the crumble topping on top.
- Bake for an additional 20 minutes, then let cool for 20 minutes before refrigerating for at least 2 hours.
