Healthy Strawberry Oatmeal Bars

Instructions
- Preheat the oven to 375°F and line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, combine oats, flour, brown sugar, ginger, and salt. Add melted butter and mix until clumpy.
- Reserve ½ cup of the crumble mixture, then press the rest into the bottom of the pan.
- Scatter half of the strawberries over the crust, then sprinkle with cornstarch, lemon juice, and ½ tablespoon of sugar.
- Add the remaining strawberries and the rest of the sugar, then top with the reserved crumble.
- Bake for 35-40 minutes until bubbly and golden. Cool completely on a wire rack.
- Prepare the glaze by whisking together powdered sugar, vanilla, and milk until smooth.
- Lift the bars from the pan using the parchment paper, drizzle with glaze, slice, and serve.
