Ingredients

Wet Ingredients

  • 1 unit ripe banana, mashed
  • ½ cup applesauce
  • 2 unit eggs
  • ½ cup milk (dairy or non-dairy)
  • ½ cup maple syrup
  • 1 tsp vanilla extract

Dry Ingredients

  • 3 cups rolled oats
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ cup chopped walnuts (optional)
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 375°F and grease a 9 x 13 inch glass pan.
  2. In a large bowl, mash the banana and then add the applesauce, eggs, milk, maple syrup, and vanilla extract. Stir to combine.
  3. In a separate bowl, mix together the oats, baking powder, cinnamon, and salt.
  4. Add the dry ingredients to the wet mixture and stir until combined.
  5. Fold in the blueberries and walnuts if using.
  6. Transfer the mixture to the prepared baking dish.
  7. Bake for 35 minutes and allow to cool on a rack before cutting into bars.
