Ingredients

  • 1 cup Quick Cooking Oats
  • 1 cup Oat Flour
  • 3 tbsp Brown Sugar
  • ½ tsp Baking Soda
  • ¾ tsp Cinnamon
  • ¼ tsp Salt
  • ½ cup Milk
  • ¼ cup Avocado Oil
  • ¼ cup Honey or Maple Syrup
  • 2 tsp Vanilla
  • 2 large Eggs
  • 1 large Egg White
  • ¼ cup Vanilla Protein Powder (optional)
  • 1 cup Blueberries

Instructions

  1. Mix the milk, eggs, egg white, vanilla, honey, and oil in a large bowl.
  2. Add the oats, oat flour, brown sugar, baking soda, cinnamon, salt, and protein powder, and stir until just combined.
  3. Fold in the blueberries.
  4. Line an 8x8 baking pan with parchment paper and pour in the oat mixture.
  5. Bake at 350°F for 37-41 minutes.
  6. Remove the bars from the pan and cool on a wire rack for 20-30 minutes before cutting and serving.
