N'oatmeal Bars

Ingredients

  • 1 cup almond butter (or other nut butter or SunButter)
  • ¼ cup water
  • 1 tbsp water
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • tsp vanilla stevia
  • ½ cup shredded unsweetened coconut
  • ½ cup raisins
  • 1 tbsp chia seed meal
  • 2 tsp cinnamon
  • ¼ tsp allspice
  • ½ tsp grain-free baking powder
  • ¼ tsp sea salt
  • ¼ tsp baking soda

Instructions

  1. 1. Mix almond butter, water, honey, vanilla, stevia, and shredded coconut in a bowl using an electric mixer.
  2. 2. Add the remaining ingredients and mix again with the electric mixer.
  3. 3. Transfer the mixture to a greased square baking dish and spread it evenly.
  4. 4. Bake in a preheated oven at 350°F for about 20 minutes.
  5. 5. Allow to cool on the counter, then refrigerate until cold before serving.
