Ingredients

The base

  • 1 cup gluten-free flour
  • ½ tsp baking powder
  • ½ tsp salt
  • cup melted coconut oil
  • ½ cup pure maple syrup
  • 1 ripe banana mashed
  • 1 large egg
  • 1 tsp vanilla extract

Add-ins

  • 2 cups rolled oats
  • ½ cup unsweetened shredded coconut
  • ½ cup chopped almonds
  • 1 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 inch pan.
  2. In a small bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, mix the melted coconut oil, maple syrup, mashed banana, egg, and vanilla.
  4. Stir in the flour mixture until combined.
  5. Add the oats, shredded coconut, chopped almonds, and mini chocolate chips, and stir to combine.
  6. Press the mixture into the prepared pan and bake for 20 to 25 minutes until the edges are brown.
  7. Cool on a wire rack for at least 30 minutes before cutting into bars.
