Instructions
- Preheat the oven to 350°F and grease a 9x13 inch pan.
- In a small bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, mix the melted coconut oil, maple syrup, mashed banana, egg, and vanilla.
- Stir in the flour mixture until combined.
- Add the oats, shredded coconut, chopped almonds, and mini chocolate chips, and stir to combine.
- Press the mixture into the prepared pan and bake for 20 to 25 minutes until the edges are brown.
- Cool on a wire rack for at least 30 minutes before cutting into bars.
