Ingredients

Dry Ingredients

  • ½ cup ground oat flour
  • ½ cup buckwheat flour
  • cups rolled oats
  • ½ teaspoon baking powder
  • ¼ cup coconut sugar
  • cup dark chocolate chips

Wet Ingredients

  • 2 large egg whites
  • 1 medium banana, ripe and mashed
  • 2 tablespoons honey
  • ¼ cup applesauce
  • ¼ cup unsweetened almond milk
  • 3 tablespoons coconut oil, melted

Instructions

  1. Preheat the oven to 350°F and line an 8x8-inch pan with parchment paper, then spray with coconut oil.
  2. In a large bowl, mix together the dry ingredients, excluding the chocolate chips.
  3. In a separate medium bowl, mash the banana and mix in the wet ingredients except for the coconut oil.
  4. Combine the wet and dry mixtures, then add the melted coconut oil and chocolate chips, mixing until combined.
  5. Transfer the batter into the prepared baking dish and optionally add more chocolate chips on top.
  6. Bake for about 20-23 minutes.
  7. Let cool for 30 minutes to an hour before slicing and enjoy.
