Instructions
- Preheat the oven to 350°F and prepare an 8x8 square pan.
- In a large bowl, mix all the oatmeal bar ingredients until a semi-sticky dough forms.
- Press ⅔ of the dough into the prepared pan firmly.
- For the date caramel, blend all the caramel ingredients in a food processor until smooth.
- Spread the date caramel evenly over the oatmeal layer in the pan.
- Sprinkle the remaining oatmeal dough over the caramel and press down lightly.
- Bake for 14-15 minutes until the edges are golden brown.
- Allow the bars to cool completely in the pan before slicing.
