Ingredients

Oatmeal Bars

  • 1 ¼ cup old fashioned rolled oats
  • ¼ cup oat flour
  • cup unsweetened shredded coconut
  • cup almonds, chopped
  • ¼ cup honey or agave
  • cup coconut oil
  • cup light brown sugar
  • cup chia seeds
  • 1 ½ Tbsp almond butter
  • ½ tsp vanilla extract
  • ¼ tsp baking soda
  • ¼ tsp salt
  • pinch cinnamon

Date Caramel

  • 14 dates
  • ¼ + ⅛ cup milk of choice
  • 1 tsp vanilla paste (or extract)

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8 square pan.
  2. In a large bowl, mix all the oatmeal bar ingredients until a semi-sticky dough forms.
  3. Press ⅔ of the dough into the prepared pan firmly.
  4. For the date caramel, blend all the caramel ingredients in a food processor until smooth.
  5. Spread the date caramel evenly over the oatmeal layer in the pan.
  6. Sprinkle the remaining oatmeal dough over the caramel and press down lightly.
  7. Bake for 14-15 minutes until the edges are golden brown.
  8. Allow the bars to cool completely in the pan before slicing.
