Ingredients

The base

  • 1 cup butter, softened
  • 2 cups packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 ½ cups all-purpose flour
  • 3 cups quick-cooking rolled oats

The filling

  • 1 cup mini semisweet chocolate chips
  • ½ cup chopped walnuts or pecans
  • 30 pieces caramels (about 9 ounces), unwrapped
  • 3 tablespoons milk

Instructions

  1. Preheat the oven to 350°F and line a 15x10 inch baking pan with foil.
  2. In a mixing bowl, beat the softened butter until creamy, then add brown sugar and mix until combined.
  3. Add eggs, vanilla, baking soda, and salt, and beat until well combined.
  4. Gradually mix in the flour, then stir in the oats.
  5. Press 2/3 of the dough into the bottom of the prepared pan.
  6. Sprinkle chocolate chips and nuts over the dough layer.
  7. In a saucepan, melt the caramels with milk over low heat until smooth.
  8. Drizzle the melted caramel over the chocolate and nuts in the pan.
  9. Flatten small pieces of the remaining dough and place them over the caramel layer.
  10. Bake for 22-25 minutes until the top is lightly browned.
  11. Allow to cool before lifting the foil to cut into bars.
