Ingredients

The base

  • 2 cups old-fashioned or quick-cooking rolled oats
  • ½ cup chopped pecans
  • 1 cup dried cranberries, chopped
  • ½ cup unsweetened plain almond milk
  • ½ cup multigrain hot cereal
  • 1 cup natural, unsweetened almond butter
  • ½ cup pure maple syrup
  • 1 tsp ground cinnamon
  • ¼ tsp fine sea salt
  • 1 tsp pure vanilla extract

For preparation

Instructions

  1. Preheat the oven to 350°F.
  2. Line a 9-inch square baking pan with foil or parchment paper and spray with cooking spray.
  3. Spread the oats and pecans on a baking sheet and bake for 6 to 8 minutes until golden and fragrant.
  4. Transfer the oat mixture to a bowl and add chopped cranberries.
  5. In a saucepan, bring the almond milk to a boil, then stir in the multigrain cereal and let it stand for 2 minutes.
  6. Add the almond butter, maple syrup, cinnamon, and salt to the cereal mixture and cook over low heat until thickened.
  7. Remove from heat and stir in vanilla extract.
  8. Combine the cereal mixture with the oat mixture, mixing until coated.
  9. Transfer to the prepared pan, flattening with a measuring cup and compacting firmly.
  10. Cool completely, then refrigerate for at least 1 hour until firm.
  11. Lift the mixture from the pan using the liner, peel off the foil or parchment, and cut into 16 bars.
