Morning Maple Cranberry Pecan Oat Bars

Instructions
- Preheat the oven to 350°F.
- Line a 9-inch square baking pan with foil or parchment paper and spray with cooking spray.
- Spread the oats and pecans on a baking sheet and bake for 6 to 8 minutes until golden and fragrant.
- Transfer the oat mixture to a bowl and add chopped cranberries.
- In a saucepan, bring the almond milk to a boil, then stir in the multigrain cereal and let it stand for 2 minutes.
- Add the almond butter, maple syrup, cinnamon, and salt to the cereal mixture and cook over low heat until thickened.
- Remove from heat and stir in vanilla extract.
- Combine the cereal mixture with the oat mixture, mixing until coated.
- Transfer to the prepared pan, flattening with a measuring cup and compacting firmly.
- Cool completely, then refrigerate for at least 1 hour until firm.
- Lift the mixture from the pan using the liner, peel off the foil or parchment, and cut into 16 bars.
