Ingredients

The base

  • 1 cup pecan pieces
  • cup pepitas
  • cup dried cranberries
  • 1 ¾ cups quick-cooking oats
  • 1 teaspoon orange zest
  • ½ teaspoon ground cinnamon
  • ½ to ¾ teaspoon salt

The binding ingredients

  • 1 cup creamy unsalted almond butter or peanut butter
  • ½ cup honey or maple syrup
  • 1 ½ teaspoons vanilla extract

Instructions

  1. Prepare a 9-inch square baking dish with parchment paper.
  2. Toast pecans and pepitas in a skillet until fragrant, then process with cranberries.
  3. Mix the processed nuts and cranberries with oats, orange zest, cinnamon, and salt.
  4. In a separate bowl, combine almond butter, honey, and vanilla until blended.
  5. Combine wet and dry ingredients until fully mixed, adding more oats if necessary.
  6. Press the mixture into the prepared baking dish and pack it down tightly.
  7. Refrigerate for at least one hour or overnight before slicing into bars.
