Homemade Cranberry Almond Granola Bars

Ingredients

The base

  • 1 cup raw cashews
  • cups raw almonds
  • 1 cup raw pecans
  • 1 cup raw pepitas
  • ¾ cup unsweetened dry cranberries

The sweeteners and flavorings

  • ¼ cup Splenda natural brown sugar
  • cup agave nectar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • a pinch of salt

The chocolate drizzle

  • 2 oz. dark chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Line a 9×13 inch baking dish with parchment paper.
  3. In a food processor, pulse half of the cashews, almonds, pecans, and cranberries until they resemble rice.
  4. Combine the pulsed mixture with the remaining whole nuts and cranberries in a large bowl.
  5. In a small saucepan, mix the Splenda brown sugar, agave nectar, vanilla extract, cinnamon, and salt, and heat until the sugar dissolves.
  6. Pour the heated mixture over the nut mixture and stir to combine.
  7. Press the mixture into the prepared baking dish.
  8. Bake for 20 minutes, then cool in the pan for 30 minutes.
  9. Melt the chocolate chips in the microwave and drizzle over the cooled bars.
  10. Cool in the refrigerator for another 30 minutes before cutting into bars.
