Ingredients

The base

  • 1 cup chopped almonds
  • 1 ¾ cups quick-cooking oats
  • 1 cup large, unsweetened coconut flakes
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt

The binding ingredients

  • 1 cup creamy almond butter or peanut butter
  • ½ cup honey or maple syrup
  • 1 ½ teaspoons vanilla extract

Instructions

  1. Line a 9-inch square baking dish with parchment paper.
  2. Toast the almonds in a skillet over medium heat until fragrant and lightly golden, then transfer to a mixing bowl.
  3. Add oats, coconut flakes, cinnamon, and salt to the bowl with almonds and stir to combine.
  4. In a measuring cup, mix almond butter, honey, and vanilla extract until blended.
  5. Pour the liquid mixture into the dry ingredients and stir until well combined.
  6. Transfer the mixture to the prepared baking dish and pack it down firmly.
  7. Cover and refrigerate for at least one hour or overnight to set.
  8. Once set, lift the bars out using the parchment paper and slice into squares.
