Instructions
- Line a 9-inch square baking dish with parchment paper.
- Toast the almonds in a skillet over medium heat until fragrant and lightly golden, then transfer to a mixing bowl.
- Add oats, coconut flakes, cinnamon, and salt to the bowl with almonds and stir to combine.
- In a measuring cup, mix almond butter, honey, and vanilla extract until blended.
- Pour the liquid mixture into the dry ingredients and stir until well combined.
- Transfer the mixture to the prepared baking dish and pack it down firmly.
- Cover and refrigerate for at least one hour or overnight to set.
- Once set, lift the bars out using the parchment paper and slice into squares.
