Coconut-Almond Granola Bars

Ingredients

Dry Ingredients

  • 1 cup rolled oats
  • cups sliced almonds
  • 1 cup flaked or shredded coconut
  • ¼ cup millet
  • ¾ teaspoon salt

Wet Ingredients

  • ¼ cup melted coconut oil or melted butter
  • ¼ cup brown rice syrup
  • ¼ cup maple syrup
  • cup almond butter
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 350ºF.
  2. Pulse the oats, almonds, and coconut in a food processor briefly.
  3. Transfer the mixture to a large bowl and add millet and salt, tossing to combine.
  4. In a separate bowl, whisk together the oil, rice syrup, maple syrup, almond butter, and vanilla until emulsified.
  5. Add the wet mixture to the dry ingredients and toss to combine.
  6. Line an 8x8-inch or 9x9-inch pan with parchment paper and transfer the mixture, spreading it evenly.
  7. Bake for 20 to 25 minutes until the edges begin to brown.
  8. Cool for 20 minutes, then remove from the pan using the parchment paper and cut into bars.
