Instructions
- Preheat the oven to 350ºF.
- Pulse the oats, almonds, and coconut in a food processor briefly.
- Transfer the mixture to a large bowl and add millet and salt, tossing to combine.
- In a separate bowl, whisk together the oil, rice syrup, maple syrup, almond butter, and vanilla until emulsified.
- Add the wet mixture to the dry ingredients and toss to combine.
- Line an 8x8-inch or 9x9-inch pan with parchment paper and transfer the mixture, spreading it evenly.
- Bake for 20 to 25 minutes until the edges begin to brown.
- Cool for 20 minutes, then remove from the pan using the parchment paper and cut into bars.
