No-Bake Chewy Coconut Granola Bars

Instructions
- Line an 8-inch or 9-inch square baking pan with parchment paper.
- Pulse the dates in a food processor until they form a chunky paste.
- Whisk the date paste, honey, almond butter, and coconut oil in a saucepan over medium heat until warm and combined.
- Stir in the vanilla extract and salt, then mix in the remaining ingredients, including chocolate if using.
- Press the mixture into the prepared baking pan and top with extra coconut if desired.
- Chill in the refrigerator for at least 1 hour or freeze for 30 minutes before cutting into squares.
