No Bake Almond Butter Granola Bars

Ingredients

  • 2 cups old fashioned rolled oats
  • 1 cup puffed rice cereal
  • 4 Tbsp coconut oil
  • ¼ cup light brown sugar
  • ½ cup almond butter
  • ¼ cup honey
  • ½ tsp vanilla extract
  • 3 Tbsp mini chocolate chips
  • 1 pinch sea salt

Instructions

  1. Combine rolled oats and puffed rice cereal in a large bowl and set aside.
  2. In a small saucepan, whisk together coconut oil, brown sugar, almond butter, and honey over medium-high heat until boiling.
  3. Lower the heat and simmer the mixture for about 2 minutes, then remove from heat and stir in vanilla extract.
  4. Pour the mixture over the dry oat mixture and fold until evenly coated.
  5. Stir in one tablespoon of chocolate chips and transfer to a lined 9x13-inch baking dish.
  6. Press the granola mixture firmly into the dish and sprinkle remaining chocolate chips and a pinch of sea salt on top.
  7. Cover and refrigerate for 2 hours.
  8. Lift the parchment paper to remove the bars from the dish and cut into 18 bars.
