Ingredients

The granola bars

  • 1 cup rolled oats
  • cup raw slivered almonds
  • ¼ cup flaxseed meal
  • cup desiccated unsweetened coconut
  • ¼ tsp sea salt
  • cup chopped dates
  • 2 Tbsp almond butter
  • 2 Tbsp melted coconut oil
  • ¼ cup maple syrup

Optional topping

  • ½ cup chopped vegan dark chocolate
  • 1 Tbsp coconut oil
  • 1 tsp sea salt or hemp seeds

Instructions

  1. Preheat the oven to 350°F (176°C) and toast the oats and almonds for 10-15 minutes.
  2. Reduce the oven temperature to 325°F (162°C).
  3. In a large bowl, mix the flaxseed meal, desiccated coconut, and sea salt.
  4. Add the toasted oats and almonds, along with the chopped dates, and mix well.
  5. In a saucepan, combine almond butter, coconut oil, and maple syrup, and heat until boiling.
  6. Pour the mixture over the dry ingredients and mix thoroughly.
  7. Transfer the mixture to a parchment-lined 8x8-inch baking pan and press down evenly.
  8. Bake for 20-25 minutes until the edges are golden brown.
  9. Let cool in the pan, then transfer to the freezer to cool faster.
  10. Once cooled, lift out and slice into bars.
  11. Optional: Melt chocolate and coconut oil, drizzle over bars, and sprinkle with sea salt or hemp seeds.
